Our daughter goes to a local newly set up Guide Group & unfortunately the experienced leader has recently left due to work & family committments. It’s sad but hey she’s given up masses of her time as a volunteer. It’s now time to focus on herself.

Luckily for us another Leader has stepped up to take the mantle & has made it really clear that she can only do this with the support of parents/carers. Too right, it’s a massive job including

facilitating the Guide Unit for 2 hours once a week during term time

organising events that the Guides are interested in

liaising with parents/carers

managing a set of accounts

attending courses in your own time to keep yourself up to date with First Aid, Safeguarding &

other activities that I’m not fully aufait with yet as I’m a parent & only ever really helped out on the odd occasion

Anyway, after careful discussion with hubby & taking into account my own constraints, I’ve decided to put my hand up & help out more permanently.

I was involved in Guiding myself, a long time ago, as a Brownie, so fingers crossed I can Make a   Difference!

Disneyland Paris Here we come!

We’re sitting at St Pancras station waiting to board our direct train to Disneyland Paris.


This has become a bit of an annual trip for us as Alexandra loves Disney particularly the characters.

We’ve had a really straightforward journey so far & I’m sure the final leg will be effortless as it has been any other time we have travelled on Eurostar.

Our train leaves at 10:14, we’ll be on it for lunch. We have just popped into the local M&S food hall & bought sandwiches & crisps (we’re on our hols after all!!)

Looking forward to spending quality time with David & Alexandra.

Loaded Potato Bake with Tesco Cypriot New Potatoes

For anybody who regularly shops at Tesco, you may have noticed their Cypriot New Potatoes. These potatoes are available in Tesco stores nationwide from now until the end of March 2017.

After seeing them in store, I came up with the idea for this dish, thinking of a baked potato & some of the ingredients that we top ours with.

This delicious bake made with #CypriotNewPotatoes is great for any night of the week. We enjoy eating it served with a green salad.


Loaded Potato Bake with Tesco Cypriot New Potatoes

Ingredients (Serves 4):

500g new potatoes

200g mushrooms, sliced

200g bacon, cut into lardons

200g cheddar cheese, grated

6 spring onions, chopped

100ml Sour cream



Boil potatoes for 15 – 20 minutes until tender

Drain & cool slightly

Spread potatoes in a slightly greased oven proof dish & press down the potatoes with the back of a spoon to smash lightly

Saute bacon lardons, sliced mushrooms & spring onions until bacon is slightly crispy

Pour sour cream on top of the potatoes & then top with the bacon, mushrooms & spring onion

Sprinkle with 2 thirds of the grated cheese & add pepper to taste

Bake at 180°c for 25 minutes

Remove from the oven & top with the remaining grated cheese. Put oven proof dish back into the oven until the cheese is melted

Serve & enjoy

Still making good progress

Am still making good progress with my goal to walk at least 3 miles every day.
Over this last week I’ve managed my goal on 6 out of the 7 days.
Breakdown of the days look like this

Monday 9.32 miles
Tuesday 10.36 miles
Wednesday 5.58 miles
Thursday 6.65 miles
Friday 7.90 miles
Saturday 6.85 miles

Found this proverb & feel it sums up how I’m feeling about my walking progress this year.


I’m hoping to do well again this week. Does depend on other activities I’ve planned as I’m off to the Genting Arena, Birmingham on Tuesday to watch our daughter Alexandra perform in Young Voices 2017 – what an amazing opportunity that is for her & she’s very excited & nervous too.
I’m sure she’ll have a great time & I personally can’t wait!

5 out of 7 ain’t bad

I’m feeling pretty pleased with myself this week as I’ve walked more than 3 miles each day Monday to Friday. 

This is more than I’ve done regularly for ages.

My breakdown of the days goes like this

Monday 7.81 miles

Tuesday 7.4 miles

Wednesday 7.75 miles

Thursday  5.79 miles

Friday 7.94 miles

So overall a very good start to 2017.

Looking forward to next week. 

Getting in a quick walk

1 of my goals for this year is to try to get out for a walk every day

Ideally I’d love to walk at least 3 miles however that’s going to depend on what else I’ve got on that day.

Anyway I managed a walk today after a morning baking. It’s great to get out & about even on such a dull winters day.


Good to see some colour amongst all the bushes & trees that have lost their leaves.  I’ve no idea what they are.  Shall be having a look at Google later to find out & learn something new today.

Pleased that my goal for today has been achieved.

And I’ve got freshly made Olive & herb bread with homemade tomato soup for tea this evening.  Both recipes are Mary Berry’s.


Using up leftovers

Having been away for Christmas 2016 we haven’t had the usual amount of leftovers to deal with. My Mother in law handed us a goody bag before we left with some cooked turkey & ham. These got used up really quickly.

I made Mary Berry’s Hot turkey & avocado bake.  Tasty meal enjoyed with some crusty bread.

I  then made a huge Gruyere & Ham pastry sandwich from the Higgidy recipe book I won last year. All the leftover ham got used in this. A great treat for a cold wintry evening.


Then a quick check of our kitchen cupboards this morning revealed  an unopened jar of mincemeat. Didn’t fancy making mince pies so did a quick Google search.

I’m definitely making these Flapjacks again. Delicious & really quick to make. Went down really well with my cuppa this afternoon.

So all leftovers used up from Christmas & tried out some new recipes which is always fun.
